INGREDIENTS
3 cups mango, diced
½ cup red onion, finely chopped
1/3 cup golden raisins
1/3 cup brown sugar
5 tbsp. garlic, finely minced
3 tbsp. ginger, finely minced
3 tbsp. white wine vinegar
¼ tsp. salt
1/8 tsp. red pepper flakes (optional)
METHOD
Mix all ingredients in a saucepan and cook over medium-low heat for approximately 30 minutes.
Stir occasionally so that mixture does not catch.
Store in a sealed jar.
