Moroccan Spice Mix

Make this recipe with the Davis & Waddell World Gourmet Casablanca Mortar & Pestle (DWG0022)


1 tsp. cumin seeds
1 tsp. ground ginger
1 tsp. sea salt
¾ tsp. black peppercorns
½ tsp. coriander seeds
½ tsp. cayenne pepper
½ tsp. ground allspice
¼ tsp. whole cloves
1 cinnamon stick


Combine all ingredients in a mortar and grind with a pestle until a fine powder forms. Ensure all spices are well mixed.


Toss spice mix through vegetables before roasting, rub into fish fillets before baking or sprinkle over buttered pita bread.

The mix can also be added to water when cooking rice for an aromatic flavour base.
